 | Recipe for Danish Aebleskiver Aebleskiver
8 eggs(separated),
1 Tbsp sugar,
2 cups flour,
1 tsp cardamom,
1/2 cup butter(melted),
1 1/2 cups cream,
Beat egg yolks and sugar. Add flour and cardamom, mix well. Add butter and cream. Blend thoroughly. Beat egg whites until stiff. Fold into batter. Heat an aebleskiver pan over medium heat.
Melt 1 tsp butter in each hole. Fill hole half way with batter, place a slice of apple or teaspoon of applesauce in the hole, fill the hole the rest of the way with batter and bake for a few minutes. Turn and bake other side until golden brown. Serve hot with jam and powdered sugar.
Makes about 3 dozen.
